Coronel speaks at SupplySide West on allergen management

Oct 5, 2023

CRB’s Pablo Coronel, Ph.D. will join “Go Nuts: Formulation and Sustainability Considerations,” a panel discussion at this fall’s SupplySide West. The interactive panel discussion will delve into current bench trends and methodologies, considerations for ingredient selection to align with sustainability requirements, and strategies for effectively managing allergens throughout the production process.

“Incorporating nuts into an existing food processing line requires careful consideration of various handling and processing factors to ensure product safety and avoid contamination of other products. In addition to a strong allergen management and segregated warehousing and storage plan, extended cleaning and sanitation are needed to remove all allergens from the equipment and environment. These cleaning practices must be supported by environmental monitoring and cleaning validation. Do not underestimate the critical nature of employee training on allergen awareness, procedures and protocols.” - Pablo Coronel, Ph.D.
